Healthy French Onion Soup

I discovered the easiest french onion soup recipe last week. My oldest daughter had just had her wisdom teeth removed and was in need of something edible that didn’t require her to chew. After searching online for french onion soup recipes, I was faced with the reality that we didn’t have many of the ingredients that the recipes out there called for such as white wine, etc.

Onion Soup Ingredients


3 medium-sized yellow cooking onions, peeled and sliced into strips
1/4 teaspoon thyme
1-1/2 teaspoons minced garlic
7 beef bouillon cubes
7 cups of water
7 slices light white bread (40 calories per slice)
1-3/4 cup Kraft Fat-Free shredded mozzarella cheese, divided (14 grams per serving)


  1. Preheat oven to 400° F.
  2. Peel the onions and cut into strips.
  3. Place the onion, thyme, and minced garlic into a pan and cook on the stove for approximately 20 minutes on medium-high heat.
  4. When the onion mixture has caramelized (turned brownish in color) and the onions appear soft and translucent, add in the bouillon cubes and the water.
  5. Continue cooking on medium-high heat until the bouillon cubes have completely dissolved.
  6. Serve 1 cup of the soup with 1 slice of bread cut into small pieces (the size of croutons). Top with 1/4 cup of shredded mozzarella cheese or a slice of provolone (whichever you prefer).
  7. Bake in preheated oven for 5-8 minutes or until cheese is golden brown.
  8. Enjoy!
