Low Calorie Cinnamon-Apple Dessert

What do you make when the kids are asking you to make dessert but you are on a diet and trying to eat healthy?
My daughter and I decided to make an apple dessert. While the dessert makes two serving, I have to admit that I would have preferred to have eaten an extra serving of apples rather than the ice cream. However, it still turned out really good!

INGREDIENTS

2 medium apples
1/4 cup sugar (or Splenda) mixed with 1 teaspoon cinnamon
1 cup vanilla ice cream, divided (1/2 cup per serving)
4 Tbsp. canned whipped cream

DIRECTIONS (Serves 2)

  1. Core the apples,then remove the apple skin with a peeler.
  2. Use a knife to cut the apples into small or medium sized cubes.
  3. Place the cubed apples into a frying pan and sprinkle with the cinnamon sugar mixture.
  4. Cook the apples on medium-high temperature, stirring constantly for approximately 10 minutes. The length of time you need to good them will differ depending on how thin you like to cut your apple pieces.
  5. Put half of the cooked apple mixture into a bowl and top with 1/2 cup vanilla ice cream and a squirt (2 Tbsp.) of whipped cream.
  6. Top with a sprinkle of cinnamon-sugar and enjoy!
